In fact it only goes into discoverable mode when you open the Bluetooth menu, and switches to normal, paired only mode when you leave the menu. Simple as that. It's actually a neat feature which saves all the messing about you have to do on other phones and makes sure you're not inadvertently advertising you're expensive phone to all around you!
